Baked Gnocchi

in Spinach & Onion Alfredo


This dish is so easy to customize — add bacon bits, breadcrumbs, pesto, extra cheese — whatever you're craving! It'll be a hit with both kids and adults alike.

Ingredients


1 16 oz. package gnocchi
8 oz. alfredo sauce
2 cups frozen spinach
1 large yellow onion
1/2 cup slivered almonds
breadcrumbs, if desired
crumbled parmesan cheese, if desired


                                                                           



Instructions



Preheat oven to 375 degrees Fahrenheit. On stovetop, set a pot of water to boil and a well-seasoned pan over medium heat. While waiting for water to boil, thinly slice half of one large yellow onion. Add a large pad of butter to pan on stovetop, and brown the onion slices. Once onion slices are browned, add 2 cups frozen spinach to the pan and cook together until thawed. Turn burner to low heat. Once water in pot is boiling, add entire package of gnocchi and cook until every gnocco has floated to the top. Drain gnocchi and add to shallow casserole dish. Fold in sauce, veggies, and almonds. Top with breadcrumbs and parmesan if desired. Bake 15-20 minutes.
